The Athlete's Plate: Salmon and Avocado

Salmon is a staple in my diet as an athlete, but most athletes avoid it because cooking fish can appear complicated. If that is you, I dare you to give this one a try!

Ingredients

  • 6-8 oz salmon fillet

  • 2 cloves garlic

  • salt

  • pepper

  • paprika

  • olive oil

  • avocado

  • cilantro

  • red onion

  • lime (or lime juice)

  • brown rice

Directions

  • cook your desired quantity of rice according to package

  • heat oven to 400 degrees Fahrenheit

  • place salmon on baking sheet (I line mine with tin foil for less mess)

  • mince garlic and toss on salmon

  • drizzle 1-2 tsb of olive oil on salmon

  • sprinkle a dash of salt and pepper on salmon

  • sprinkle 1/2 tsp of paprika on salmon

  • cook salmon for 10-12 min

  • while salmon cooks, peel avocado and slice into chunks

  • dice 1/2 red onion and place in bowl with avocado

  • chop 1/4 tsb cilantro leaves and toss in with avocado

  • squeeze a dash of lime juice onto avocado mix

  • take salmon out, pair with rice and top with avocado mix for a delicious and nutritious meal

Notes

Salmon stays well in the fridge (in my opinion it is actually better the next day). This is a perfect meal-prep meal for the days ahead with a rice cooker.
